Sometimes your vegetable broth needs to pack that poultry punch. We’re here for you! Behold Sally’s secret for a rich, flavorful broth that you can make yourself. C’mon, don’t be chicken!
The Soup Charmer’s Chicken Broth
(makes 6 quarts)
1 whole chicken, cut up
6 quarts cold water
2 carrots, peeled and cut into large chunks*
2 onions, peeled and halved*
2 stalks celery, cut large
4 parsley sprigs
A few peppercorns
Place all ingredients in a large pot and bring to a boil over medium heat. Skim off scum as it appears on the surface. Reduce heat and simmer, partially covered. After one hour, remove breasts and thighs, pull off meat, and return bones and skin to the pot. Simmer for another 1 ½ hours. Strain through cheesecloth. Cool and refrigerate. Skim fat off top when chilled.
