A soup near and dear to the Soup Charmer’s heart. Her sweet mama used to make a chicken tarragon casserole that was a family favorite, so Sally decided to make a soup to honor that memory. Nailed it after three tries! (Meaty)
(makes approx. 4 quarts)
½ cup (1 stick) butter
2 medium yellow onions, chopped
2 tsp poultry seasoning
1 lb sliced cremini mushrooms
¼ cup fresh tarragon, chopped
½ cup flour
2 quarts Souper Chicken Broth
1 lb green beans, trimmed cut into 1 inch(ish) pieces
1 lb diced cooked chicken
1 cup heavy cream
Salt and freshly ground black pepper
Melt butter over medium-low heat; add onion, poultry seasoning, and a sprinkling of salt and pepper. Add mushrooms, tarragon, and another sprinkle of salt and pepper. Add flour and cook a few minutes. Add Souper Chicken Broth and green beans. Simmer until beans are just tender, then add chicken. Temper* the heavy cream and add to pot. Salt and pepper to taste.
*Put cream in a bowl. Gradually add enough hot soup to raise the temp and add back to the pot without curdling. You don’t want curdling. Curdling’s bad, mkay?
