What to do with a tomato bounty? One word: THIS. Grab some fresh basil and a couple of things from your pantry and this soup will be ready in a flash. Simple and summery! (Vegan)
(makes approx. 1 ½ quarts)
4 tomatoes, peeled and seeded
1 quart tomato juice
12 fresh basil leaves
2 cups coconut milk
3 Tbsp coconut oil
Salt and pepper to taste
Combine tomatoes and tomato juice over medium heat. Let it come to a boil and simmer 30 minutes. Add basil leaves and puree.*
Over medium-low heat, stir in coconut milk and coconut oil. Stir until all the coconut oil is melted.** Do not let it come to a boil. Season to taste with salt and pepper.
*If you don’t already have an immersion (stick) blender, go buy one and make a new best friend. I love mine. I want to marry it.
**If it is summertime and your coconut oil is not already melty, your A/C is set waaay too low, pardner.
