What to do with a tomato bounty? One word: THIS. Grab some fresh basil and a couple of things from your pantry and this soup will be ready in a flash. Simple and summery! (Vegan)

(makes approx. 1 ½ quarts)

4 tomatoes, peeled and seeded

1 quart tomato juice

12 fresh basil leaves

2 cups coconut milk

3 Tbsp coconut oil

Salt and pepper to taste

Combine tomatoes and tomato juice over medium heat. Let it come to a boil and simmer 30 minutes. Add basil leaves and puree.*

Over medium-low heat, stir in coconut milk and coconut oil. Stir until all the coconut oil is melted.** Do not let it come to a boil. Season to taste with salt and pepper.

*If you don’t already have an immersion (stick) blender, go buy one and make a new best friend. I love mine. I want to marry it.

**If it is summertime and your coconut oil is not already melty, your A/C is set waaay too low, pardner.

Sundance Records was a locally owned and operated independent record store that was a Downtown Chico fixture from its establishment in 1969 until its unfortunate demise in April of 2001. The store carried new and used music, t-shirts, posters, novelty gifts, greeting cards, and “smoking accessories.”

This is our recommended jam for making Sundance. Don’t blame it on the sunshine.
Don’t blame it on the moonlight.
Don’t blame it on good times.
